Artwork and a Nap?!

Today We Remember...



Today we remember two very special people that touched our lives. It is the birthday of Eric's grandma, Edith and my grandpa, Bart. They both influenced our upbringings and affected our lives in positive ways. We miss them dearly, but know they are celebrating their special day in Heaven.

Good Friends





Here is a picture of my friends, Sheila, Carrie, Mindy and all of our kids. The girls and one boy enjoyed playing together while the ladies ate cake and visited. My First Broken Bone


Yes, it's true, up until today I have not had a broken bone in my body. This afternoon, I stubbed my baby toe on Eric's shoe and broke it. I never realized that a little toe could hurt so much. Eric and the girls took me to the clinic, where they did X-rays and re-set my toe, as it was sticking out laterally from my foot. Eric could have done it himself, but I am too much of a baby and needed the novacaine!

Flowers


This is the last day of classes for me this week. It has been a busy time, but I am excited to start writing my doctoral dissertation . While I was gone, Courtney planed some pretty flowers in our back planter (with help from Grandma). Thanks, Courtney! It will be nice to get home this evening and see Eric and the girls. Studying with Grandma


Grandma Darlene and Grandpa Jim are here visiting for a few days. I will be leaving for Vermillion tomorrow to take a class, and Eric will be coming home Monday night. Grandma brought a packet of materials called, Jumpstart First Grade for Courtney to work on. They spent most of the afternoon making books, reading and doing math problems. It is so nice to have them here, they are both very helpful:) Have a great week everyone!

Rhubarb Quick Bread

Last weekend, Laurie brought some delicious rhubarb bread to the Smith family gathering. I found a recipe on the internet and taking some rhubarb from mom's garden made some bread. It was really delicious, so thought I'd share....

Rhubarb Quick Bread

Ingredients:
1 cup brown sugar, packed
1/2 cup white sugar
2/3 cup oil
1 egg
1 cup buttermilk
1 t. salt
1 t. baking soda
1 t. cinnamon
1 t. vanilla
2 1/2 cups flour
1 1/2 cups diced rhubarb
1/2 cup chopped nuts ( I left these out)
1/2 cup brown sugar mixed with 1 T. margarine for glaze

Grease and flour 2 loaf pans. Mix together in this order: brown sugar, white sugar, oil, egg, buttermilk, salt, soda, cinnamon, vanilla and flour. Mix in 1 1/2 cups rhubarb and chopped nuts. Pour into prepared pans. Top with brown sugar mixed with margarine. Bake at 375 degrees for 1 hour.
