Chicken Tetrazzini
My sister-in-law, Laurie posted a recipe for chicken tetrazzini on her blog last week. She is an excellent cook, so we thought we'd try it. Eric made supper on Sunday night and the chicken tetrazzini was a big hit! The girls liked it as well. Here is the recipe....thanks, Laurie:)
Easy Chicken Tetrazzini
1/2 pound cooked/drained spaghetti
2 cups shredded chicken-cooked of course.
1 can cream soup, chicken or celer
1 can sliced mushrooms (optional)
1 can french green beans or asparagus
1 cup water(save from veg.)
2 T butter
1/4 cup chopped onions
1-2 tsp chicken bouillon
1/4 cup cheddar cheese or more!
Seasonings-pepper, herbs of provence or thyme, basil,rosemary
Put cooked spaghetti in a med sized baking dish. Layer chicken on top of spaghetti. In a med saucepan heat butter, onions, then add soup, water, vegetables, mushrooms, and desired seasonings. I use pepper and herbs of P. Last add cheese and stir until melted. Pour over the chicken and bake for 25 mn at 350.

Courtney's Cold...
Courtney has been home all week with a very bad cold. Eric and I have beeen taking turns staying home with her. She tried to go to school yesterday, but the school secretary called us at 9:00 am and said Courtney was running a fever. I took her to the doctor and she has a very bad cold accompanied by a fever that ranges between 99-102 degrees. She is pretty miserable. We went and got all of her reading and math work from school, so she has been busy with that. The doctor checked her for influenza and strep, both tests came back negative, so that was the good news. Hopefully she can recover this weekend. We are planning to meet our friends Jenny (Rowe) and Cullen Glass + kids in Alexandria next Saturday at the Arrowwood. We thought it would be a fun meeting place. The kids will be able to swim and we'll spend one night there before coming home on Sunday. Warren and Ann we'll call you next Saturday and see what you're up to...Have a great weekend everyone! P.S. I love this picture of Courtney and Sam, so thought I would post it! They look very happy and relaxed!

Idol is Back!
As most of you know....the Heath family is faithful American Idol fans! We are excited that season 7 is underway and enjoyed watching the top 12 men sing this evening. We have two favorites, David and Michael. It will be fun to watch the women compete tomorrow night.
Courtney came down with the flu (fever, nausea, achy) yesterday, so Eric and I took turns staying home with her today. He stayed home in the morning and I came home around 12:30 so that he could go to work. We are two hours late tomorrow due to the cold. We'll see how Courtney is doing tomorrow, but we may need to keep her home one more day.

Reading Together
Courtney had a sleepover on Sunday night since we did not have school today. Hema spent the night. Her sister Sahali came over earlier in the day to play with Kelsey but is a little too young to stay overnight:) We had a nice quiet holiday weekend. The winter sports seasons are finally winding down which means Eric will be less busy in the evenings. The girls and I are looking forward to having him around more. Have a good week everyone:)

Toothless and Wii
It's another cold day in South Dakota...the girls and I did venture out to church this morning but otherwise have stayed home all day. We addressed Courtney and Kelsey's valentine cards, made some bars and played Wii. Yes, we broke down and bought a Wii-it's actually pretty fun! Kelsey loves to box and usually knocks me out within the first or second round.
As you can tell from the photo, Courtney lost a tooth while I was gone. The other tooth next to it is quite loose as well. Pretty soon she'll be missing her two front teeth. Have a good week!

Danielle
Hi Everyone! I am home from Phoenix...it was a nice trip and I was able to have supper with Danielle and her boyfriend, Mike. As you can see from the picture she is a brunette! Her hair style is very cute. We had a nice visit and it was really good to see her! She wanted me to greet everyone for her and says she misses everybody.

Go Suns!!
I went to the Phoenix Suns game this evening. They played the New Orleans Hornets. It was a great game, but the Suns lost in double overtime 132-130. The highlight was seeing the newest Phoenix Suns player, Shaquille O'Neal. The conference ends tomorrow. I called Danielle yesterday and we are going to get together for supper tomorrow night. I am looking forward to seeing her. I'll take some pictures to post when I get back home. The weather here has been nice, the sunshine is especially wonderful!

Super Tuesday!
Hello from Phoenix! It is almost sixty degrees today, which feels wonderful. My flight from Sioux Falls yesterday was delayed two hours, which forced me to miss my connection in Minneapolis. I was able to board the 9:30 pm flight to Phoenix, but didn't leave MSP until 10:25...so it was 2:00 am MST before I settled into my hotel room. My superintendent is with me as well. We are a little tired today, but doing ok. It was fun to see the town still decorated for the Super Bowl-a lot of signs and football decor! I'm staying at the Hyatt Regency downtown, it reminds me of the Luxor hotel in Vegas-but more modern. Happy Super Tuesday from the home of the future Republican presidential candidate, John McCain:) I heard he may be arriving in Phoenix later today...
